Schnitzel Master Compact Conveyor Tenderizer and Flattener with 200 kg/hr production
The Schnitzel Master tenderizes meat using a process called "Mastering®". This patented system ensures meat fibres are neither pressed, nor steaked, nor battered in the process, but only carefully stretched in a longitudinal and lateral direction so the customer experiences a completely different taste experience and the fresh meat character is preserved. It increases meat surface areas by up to 50%, produces a higher weight product, maintains a benchmark pH, extends shelf life of up to eight days and contributes to a tastier meat juicer meat when served. The SMK series is fully automated compact conveyor flattener machine designed for production within a confined space. The cut and portioned meat is carried via a transportation belt to the Mastering® processor which consists of two pairs of toothed rollers and then finally smoothed by a second pair of rollers. The desired final meat thickness is reached by means of separate adjustable levers.
