TEOREMA POLIS is the pioneer of modular multi-function deck ovens. Designed and patented in 1982, it represents the synthesis of the knowledge developed by Zanolli in the field of modular static ovens. Since the first model was designed and patented in 1982, the Teorema range has delivered superb results in successful kitchens all over the world. Designed for cooking pizza, bread and for pastry making, these ovens are sophisticated without compromising simplicity of use. Performance is excellent due to new electronic operating systems with safe and easy to use controls. Thanks to its natural versatility, Teorema Polis cooks any product evenly, emulating a wide range of cooking standards. You can decide whether to bake in a baking tray or directly on the oven base and, in this case, opt for the base of the cooking chamber in refractory material. Depending on your needs, you can add a range of accessories including an extractor hood, leavening cell, steam generators and bread batch frames to name a few. The Polis comes in two chamber height sizes a 180mm and a 300mm for higher products and is completely modular so it can be stacked up to 4 high in any chamber height combination. The Polis 2S is distinguished by its two tray (600 x 400) capacity and 180mm chamber height. It is also uniquely designed to fit the two trays one after another (sideways) so as to minimise the external width of the oven and making it the most compact deck oven in the Polis family.
